Keeping the British troops supplied with fresh beer out in the British East Indies proved to be a problem during the 19th Century. The lengthy journey by sailing ship caused the beers to spoil and a special brew therefore had to be supplied - India Pale Ale. This was brewed to a high alcoholic strength to keep bacteria at bay during the voyage. Upon arrival the beer was watered down to normal pub strength for the troops.

Of course the officers had access to the non-diluted version! However you have a choice. Recreate India Pale Ale, brewed to the Troops Tipple at approximately 1041 strength or the Higher Ranks Reserve version in its higher strength form.

At the end of the 19th century a beer was brewed especially for the dockyard workers of the bustling Port of London. Docklands Porter was named after these strong men, who unloaded the cargoes of sailing ships and schooners berthed at the many wharves along the Thames. Porter had a uniquely rich and satisfying flavour which quenched the thirst of dockers after long shifts loading and unloading vessels from around the world.

You can now recapture the unique flavour of traditional Victorian Porters - a light hop character and full malt flavour under lie a rich colour, possible by the subtle use of the best roasted malts.

Traditionally known for being a strong beer brewed in East Anglia. Norfolk NOG is an excellent example of a strong ale.

This reddish beer has an initial explosion of roast malt bitterness. This settles down, as a malty sweetness makes its presence felt. Maintains a dominant roast dryness to the end.

In our opinion this is one of the best winter/dark ale kits available which produces a beer that far exceeds those available in most pubs.

They are produced by the aqueous extraction of sugars from malted barley and are subsequently concentrated into a viscous syrup. They are a valuable source of fermentable sugars, provide natural colouring and impart their traditional rich malty flavour.

This bottom tap keg holds nearly 26 Litres and has a 4inch neck opening, which allows for easy cleaning. The screw cap carries a pressure release and a CO2 introduction valve to enable excess gas from over priming to be realeased automatically and additional gas can be introduced to keep up internal pressure. This is the ideal barrel for the connoisseur, who is prepared to leave his beer up to mature, condition and clear to perfection.

The bottom tap barrel is supplied with the S30 pin valve.

This keg has the same high specifications as the "King Keg Bottom Tap" except that the dispense tap is placed near to the shoulder of the keg and has the latstock easy-serve float system attached to it. The advantage of a float take off system is that as the beer clears from the top downwards, it can be drawn off from just below the surface and therefore drunk much sooner than from the low tap dispense system of the standard King Keg.

This 8gm co2 bulb injector is designed for use with our king kegs and standard kegs that are fitted with a pin valve.

Just insert the bulb into the injector an screw it onto the valve - easy.

This premium quality pressure barrel holds 6 Gallons (27 litres) and comes with a large 4inch lid (which makes it easier to clean) complete with a S30 valve. The valve is designed to allow extra gas (pressure) to be inserted into the barrel and also allows release of excess pressure that might build up during secondary fermentation.

It is designed to be use with an S30 gas cylinder. If you don’t use the S30 gas bottles (only available in certain parts of the country) then you will need an 8g Injector complete with black bulb holder and a pack of 10 of the 8g gas bulbs.

The top tap (this incorporates a float) system means that as the beer starts to clear you can draw this off first – which is particularly useful if you are impatient! The drip tray is also a nice extra.

The extra capacity (6 gallons size with only a 5 gallon beer kit) is designed to store the extra pressure that builds up during fermentation so you will need to add less additional gas. Top tap is also useful if you are storing the barrel in an area where you don’t have an overhang or if it’s on the floor as the glass goes under the tap easily.

Keeping the British troops supplied with fresh beer out in the British East Indies proved to be a problem during the 19th Century. The lengthy journey by sailing ship caused the beers to spoil and a special brew therefore had to be supplied - India Pale Ale. This was brewed to a high alcoholic strength to keep bacteria at bay during the voyage. Upon arrival the beer was watered down to normal pub strength for the troops.

Of course the officers had access to the non-diluted version! However you have a choice. Recreate India Pale Ale, brewed to the Troops Tipple at approximately 1041 strength or the Higher Ranks Reserve version in its higher strength form.

This strain was selected based on its ability to produce English-style ales. It is a strong fermenting strain with rapid attenuation of fermentable sugars. Most noteworthy is this strains alcohol tolerance, producing commercial ales with up to 9.5% alcohol.

Mauribrew Ale 514 is suitable for all top fermented beers: English or Belgian Ales, Strong Ale, Koelsch, Porter or Stout.
Its subtle yeasty flavours contribute to the aromatic complexity of the beer.

This strain rapidly attenuates fermentable sugars with typical wort falling from a gravity of 1040-1045 resulting in a beer of less than 1008.

Thanks to its high temperature tolerance Mauribrew Ale can ferment from 20°C up to 32°C. Desirable flavour characters result with this strain at 22°C.

Lager 497 is a bottom fermenting lager yeast that produces highly desirable flavour characteristics consistent with quality lager beer. While producing almost no yeast head during fermentation, it is a rapid fermenter with a low oxygen requirement, generally completing within 5 days. This strain has good settling properties, resulting in a green beer of good clarity.

Desirable flavour characters result with this strain through the 10-15°C temperature range.
At higher temperature (20°C) Mauribrew Lager 497 enhances raw materials’ aromas (malt, spices, hop) more than other strains.
 

Mauribrew Weiss produces large quantities of fermentation aromas (esters, higher alcohols) that contribute to the complexity of German-style wheat beers. Mauribrew Weiss is also suitable for special beers made with macerated fruits, honey or any kind of sugar based additional ingredients (maple syrup, fudge, candies …).

A rapid fermenter at warm ambient temperatures, resulting in a typical fermentation time of between 4 and 7 days.

Sweet wort OG 1040-1045 is fermented normally to low final gravity.

Sufficient for 22.5 litres. Mix yeast with warm water (20-27C) and add to fermentation bucket. Stir daily.

Bramling Cross (UK) - Alpha Acid 5.0 - 7.0%

This is the classic Lager hop. Its fine aroma properties are world renowned, ideally suited to all Lagers and can even be used to good effect in Bitters.

Although essentially Fuggles, these hops have a beautiful perfumey aroma which lends itself to both Continental Lagers and the less malty English ales. Many English brewers use these for late and dry hopping Bitters.

Styrian Goldings (Slovenia) - Alpha Acid 3.0 - 6.0%

This is a refreshing light pale ale with a rich golden colour and a distinctive hoppy taste. A gentle invitation for lager drinkers to enter the flavoursome world of English style bitter.

Starch hazes can occur in wines made from grain, bananas, or root vegetables.

These enzymes turn the non-fermentable starch into fermentable starch. Clearzyme also contains a pectin destroying enzyme.

Tannin is naturally found in the skins of grapes. Red wines benefit from tannin as it improves the taste. It is the tannin in wine that gives the impression of dryness in the mouth. Tannin is beneficial to wine being stored for a long time.
