It does benefit from a couple of months maturing and for a cheapish kit its probably the best out there. Get one and you wont be dissapointed. Written By: Thirsty Man (08 August 2010) Made this one up to 20L with 1KG Muntons Beer Kit Enhancer and left it in the fermentation bucket for 10 days, then primed the bottles with 15ml of sugar solution, working out at 3.5g sugar per 500ml bottle. I was impatient, and tried one after just a week in the bottle and it was lovely! Just the right amount of fizz for a stout, and the sediment in the bottom of the bottle didn't even move when pouring. This is just going to get better as it matures too! A highly recommended kit. Written By: James Hardacre (25 July 2010) 500g or 1KG dry malt taste test: The 11 month old stout with only 500g dark dry malt has a much more bitter finish if that is what you like. The 1KG medium dry malt version is much less bitter and preferred by most people. The 1KG medium dry malt version still has a nice bitterness level, is thicker, more malty but not too sweet. It's a great stout kit made either way and we will make with 1KG dry malt as that is our preferred taste.
Both kits made to 23L, fermented at 18C using kit yeast, used a 21 day primary, then bottled. Made up only to 18L initially due to the extreme foaming action early on then topped up with Brita filtered water to 23L on day 4. Sprinkle the dry yeast into 23C wort get the yeast going quickly on day 1, I wrap the pail in a blanket for the first day to keep the 23C wort temp until the yeast start foaming up which only takes six hours or so then remove the blanket and let it ferment at 18C. Written By: Mike Smith (12 December 2009) Very good made up with 1KG medium dry spray malt and it is much better compared to the overly bitter Guinness by those who try it.
Had a wonderful Christmas Pudding Stout last year that had a nice cherry flavor/aroma to it. Tried to replicate that brew with this kit and an 8oz bottle of "Sour Cherry" concentrate added on day 4, fermented for 20 days in primary. At bottling added 2oz of natural "Almond Extract" which is the secret to making cherry pie taste better and is the flavor in "Cherry Coke". Have heard of people using Almond Extract in ales for a nutty flavor as well. Note: Do not use black cherry concentrate as it apparently makes everything taste like cough medicine.
Tasted during bottling the other day and its a nice stout with a hint of cherry flavor and a definite cherry aroma. Expect after a few months of bottle aging most of the cherry hints will go away. Is not as cherry flavored as the Christmas Pudding Stout was. Written By: Mike Smith (21 October 2009) Cracking well balanced stout, not too bitter but with plenty of flavour. Made with 1kg DME to 20 litres, highly recommended. VERY vigorous fermentation though, prepare for it frothing over the top cos it will. ;-) Written By: Dj Keighley (21 September 2009)
